Welcome, Lykkers! Have you ever wanted to bring bright tropical flavors to your dining table with one simple recipe? Today, we are making Thai Pineapple Fried Rice, a colorful dish that combines fluffy rice, juicy pineapple, fresh vegetables, and tender shrimp.
Every spoonful brings a lovely balance of sweet and savory flavors, making it a great choice for lunch or dinner. Let's prepare this delicious meal together!

What Makes Thai Pineapple Fried Rice Special?

Thai Pineapple Fried Rice is popular because it combines fresh fruit with seasoned rice, creating a refreshing and satisfying meal. Sweet pineapple adds natural freshness, while shrimp, vegetables, and roasted cashews provide different textures in every bite. Curry powder gives the rice its warm golden color and gentle aroma without making the dish complicated.
This recipe is also practical because we can prepare it in less than 30 minutes. Leftover chilled rice works perfectly, making it an excellent way to create a delicious meal from simple ingredients already in our kitchen.

Ingredients We Need

For 2 generous servings, prepare:
- 1 1/2 cups chilled cooked jasmine rice
- 10 medium shrimp, peeled and cleaned
- 2 large eggs
- 3 tablespoons vegetable oil
- 5 garlic cloves, finely minced
- 1/2 cup diced onion
- 1 cup diced fresh pineapple
- 1/2 cup green peas
- 1/2 cup diced carrots
- 1/2 cup diced sweet bell pepper
- 1/4 cup roasted cashews
- 1 tablespoon soy sauce
- 1/2 tablespoon curry powder
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1 green onion, sliced
- 1 tablespoon chopped cilantro (optional)
- Fresh lime wedges for serving
Optional topping:
- 1 tablespoon fish sauce
- 1 garlic clove, finely minced
- 1 fresh chili, finely chopped
- 2 teaspoons fresh lime juice

Step 1: Prepare the Shrimp and Eggs

1. Heat 1 tablespoon of vegetable oil in a large wok or frying pan over medium-high heat.
2. Add the shrimp in a single layer and cook for about 1 minute on each side until they turn pink and are almost fully cooked. Remove them from the pan and set aside.
3. Add another tablespoon of oil. Beat the eggs lightly and add them to the pan. Leave them untouched for about 30 seconds, then gently scramble them into soft pieces and transfer them to a plate.

Step 2: Build the Flavor Base

1. Pour the remaining tablespoon of vegetable oil into the pan.
2. Add the diced onion and cook for about 2 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
3. Add the chilled rice, breaking apart any large clumps with a spatula. Stir continuously so every grain becomes evenly coated with the oil and aromatic ingredients.
4. Sprinkle in the curry powder, sugar, and salt. Pour in the soy sauce and continue stirring for about 2 minutes until the rice turns a beautiful golden color.

Step 3: Add the Vegetables

1. Mix in the diced carrots, peas, and sweet bell pepper.
2. Cook everything together for about 3 minutes, allowing the vegetables to become tender while still keeping a pleasant crunch. This combination adds bright colors and fresh flavor to every serving.
3. Return the cooked shrimp and scrambled eggs to the pan. Stir gently until everything is evenly combined.

Step 4: Finish with Pineapple and Cashews

1. Add the diced pineapple and roasted cashews.
2. Cook for another 2 minutes, stirring gently so the pineapple warms through without becoming too soft. The pineapple releases a little natural sweetness that blends beautifully with the savory rice.
3. Sprinkle the sliced green onion over the rice. If desired, add chopped cilantro for extra freshness.
4. Serve immediately with fresh lime wedges on the side. A squeeze of lime brightens every bite and makes the flavors even more refreshing.

Optional Flavor Boost

If we enjoy a little extra brightness, we can mix together fish sauce, minced garlic, chopped fresh chili, and fresh lime juice in a small bowl. Spoon a little over the rice just before eating to add another layer of fresh flavor without overpowering the dish.

Helpful Cooking Tips

- For the best texture, chilled rice prepared a day earlier works better than freshly cooked rice because the grains stay separate during cooking.
- Fresh pineapple gives the brightest flavor, but canned pineapple packed in juice also works well. Simply drain it thoroughly before adding it to the rice.
- Prepare all ingredients before heating the pan because the cooking process moves quickly. Stir constantly to keep the rice evenly heated and full of flavor.
- Roasted cashews are added near the end so they remain crunchy and provide a satisfying contrast to the tender rice and juicy pineapple.
