Step 1
Mix the coarse sea salt and 1 tablespoon chili powder on a small plate. Pour 2 tablespoons lime juice onto another plate. Dip the rim of six tall glasses lightly into the juice, then into the chili-salt mixture. You are aiming for a colorful edge, not constructing a seasoning wall around the glass.
Step 2
For the lime version, combine 1/2 cup lime juice, 1 tablespoon honey, 2 teaspoons Worcestershire sauce, and 1 teaspoon hot sauce. For the tamarind version, mix 1/3 cup tamarind concentrate with 2 tablespoons agave syrup, 2 teaspoons Worcestershire sauce, 1 teaspoon hot sauce, soy sauce, and smoked paprika. Taste each fruit base and adjust carefully. Tamarind may need more sweetness, while ripe passion fruit may already bring plenty of its own.
Step 4
Divide the ice among the six prepared glasses. Add the corresponding fruit mixture, filling two glasses with each flavor. Divide the chilled zero-proof malt drink and sparkling water among them, then stir gently.
