1 tablespoon (15 ml) extra-virgin olive oil, plus extra for finishing
2 cloves garlic, finely minced
1 small shallot, finely minced
1 teaspoon (5 ml) Calabrian hot chili spread
Freshly ground black pepper, to taste
Small handful fresh chives, finely minced
Chive blossoms, optional, for garnish

Step-by-Step Instructions

Step 1: Prepare the Sea Urchin Sauce
- Set aside 4 whole pieces of sea urchin for garnishing the finished pasta.
- Place the remaining sea urchin roe and the ⅓ cup crema or crème fraîche into a blender, food processor, mini chopper, or suitable container for an immersion blender.
- Blend until completely smooth and creamy.
- The finished mixture should have an even texture without visible pieces of sea urchin. Set the puree aside while preparing the pasta and aromatics.
Step 2: Cook the Pasta
- Place the dried pasta in a 12-inch skillet or saucepan and add enough water to cover it.
- Season the water generously with salt.
- Set the skillet or saucepan over high heat and bring the water to a boil. Stir the pasta occasionally as it cooks to prevent the strands from sticking together.
