Ingredients for the Chocolate Cake
For the chocolate sponge, you’ll need:
¾ cup (95g) cake flour or all-purpose flour
¼ cup (21g) unsweetened natural or Dutch-process cocoa powder, plus extra for rolling
1 teaspoon baking powder
½ teaspoon salt
4 large eggs, separated and brought to room temperature
¾ cup (150g) granulated sugar, divided
¼ cup (60ml) vegetable oil
¼ cup (60ml) buttermilk or whole milk
1½ teaspoons pure vanilla extract
1 teaspoon espresso powder, optional

Ingredients for the Vanilla Whipped Cream
1 cup (240ml) cold heavy cream or heavy whipping cream
3 tablespoons (38g) granulated sugar or confectioners’ sugar
1 teaspoon pure vanilla extract
2 tablespoons marshmallow creme, optional

½ cup (120ml) heavy cream or heavy whipping cream
1 bar (4 ounces/113g) semi-sweet chocolate, finely chopped
1 teaspoon light corn syrup, optional for a glossy finish
How to Make Chocolate Cake Roll
1. Prepare the Baking Pan
- Preheat the oven to 350°F (177°C).
- Grease a 12×17-inch baking pan thoroughly with nonstick spray or butter. Line the pan with parchment paper, then grease the parchment as well. A well-prepared pan makes it much easier to remove the delicate cake after baking.
2. Sift the Dry Ingredients
- Place the flour, cocoa powder, baking powder, and salt in a fine-mesh sieve. Sift them together into a bowl and set aside.
- Sifting helps remove lumps from the cocoa powder and flour while also making the finished cake lighter.
3. Whip the Egg Whites
- Separate the eggs carefully, placing the whites in a clean mixing bowl.
- Using a hand mixer or stand mixer with a whisk attachment, beat the egg whites and ¼ cup (50g) of the sugar on high speed for about 4–5 minutes.
- Stop when medium peaks form. The whipped whites should hold their shape but still have a slight droop at the tip.
- Transfer the whipped egg whites to another bowl.
4. Prepare the Egg Yolk Mixture
- There’s no need to clean the mixing bowl. Add the egg yolks and remaining sugar and beat on high speed for about 1 minute.
- Add the vegetable oil, buttermilk or whole milk, vanilla extract, and espresso powder, if using. Continue beating on high speed for approximately 2 minutes.
- The mixture will look thin and may have a few bubbles across the surface.
- Add half of the whipped egg whites to the yolk mixture and mix on low speed for about 10 seconds. Add the remaining egg whites and mix gently for another 10 seconds.
5. Add the Dry Ingredients
- Sift the flour mixture into the egg mixture.
- Using a silicone spatula, gently fold everything together until just combined. Take care not to overmix, because the batter should remain light and airy.
6. Bake the Chocolate Cake
- Spread the batter evenly across the prepared pan. The layer will be quite thin, which is exactly what you want for a cake roll.
- Gently move or tap the pan on the counter to smooth the surface.
- Bake for 12–14 minutes, or until the top of the cake lightly springs back when touched.
- Do not overbake. A dry sponge is more difficult to roll.
7. Roll the Cake While It’s Warm
- While the cake is baking, place a sheet of parchment paper larger than the cake on your counter, or use a thin, clean kitchen towel.
- Dust the surface generously with approximately 2 tablespoons of cocoa powder.
- As soon as the cake comes out of the oven, carefully run a cut around the edges to loosen it from the pan.
- Immediately turn the cake onto the prepared parchment or towel. Carefully peel away the parchment that was underneath the cake during baking.
- Starting from one narrow end, slowly and gently roll the warm cake together with the parchment or towel.
8. Whip the Cream
- Add the cold heavy cream, sugar, and vanilla extract to a mixing bowl.
- Using a hand mixer or stand mixer fitted with a whisk attachment, beat on medium-high speed for approximately 2–3 minutes, or until medium to stiff peaks form.
- If you’re using marshmallow creme, gently beat in 2 tablespoons once the whipped cream has reached the right consistency.
9. Add the Filling
- Slowly and carefully unroll the completely cooled cake.
- Spread the vanilla whipped cream evenly over the surface, leaving about a ½-inch border around the edges.
- Gently roll the cake back up, this time without the parchment paper or towel.
10. Prepare the Ganache
- Place the finely chopped semi-sweet chocolate in a medium bowl. Add the light corn syrup if you want an especially glossy finish.
- Pour the heavy cream into a small saucepan and heat until it reaches a gentle simmer. Do not let the cream rapidly boil.
- Pour the hot cream over the chopped chocolate and let it sit undisturbed for 2–3 minutes.
- Slowly stir until the chocolate melts completely and the ganache becomes smooth and glossy.
11. Finish the Cake Roll
- Pour the warm ganache over the entire cake roll, allowing it to naturally drip down the sides.
- If some ganache collects on the baking sheet, you can spoon it back over the cake for an extra layer of chocolate.
- Refrigerate the finished cake roll for at least 30–60 minutes before slicing. This gives the ganache time to set and makes the cake easier to cut neatly.
