For cooking the chicken, prepare 2 tbsp ghee or oil, 1 cinnamon stick, 2 bay leaves, 5 cloves, 3 cardamom pods, the fried onions, 1 cup tomato passata, 1 cup water, and 1/4 cup coriander leaves plus 1/4 cup mint leaves. For the rice seasoning water, use 3 liters of water, 1 1/2 tbsp salt, 2 bay leaves, 1 cinnamon stick, 5 cloves, and 4 cardamom pods. For the saffron finish, combine a pinch of saffron with 2 tbsp warm milk or water.
How To Prepare the Chicken
Mix the chicken with yogurt, garlic, ginger, yellow spice, garam masala, chili powder, coriander, cumin, cinnamon, and salt. Let it marinate for about 20 minutes, or longer if you have time. This step helps the chicken absorb the spice mixture and stay tender during cooking. While that rests, rinse the long-grain white rice until the water runs mostly clear, then soak it for 30 minutes. Drain it before cooking.
How To Make the Fried Onions

Spread the partly cooked rice over the chicken in an even layer. Scatter the remaining fried onions, coriander, and mint over the top. Drizzle the saffron milk across the surface. Cover the vessel tightly and cook on low heat so the rice finishes gently and the layers settle together. This final steaming stage is what gives biryani its signature texture, with separate grains of rice carrying flavor from the chicken below without turning heavy or sticky.
Tips for Best Results
Use long-grain white rice, separate grains. Do not overcook the rice during the first boil because it will continue cooking during the final covered stage.
