Lykkers, if we enjoy fresh berries and creamy desserts, this strawberry mousse cake is a lovely recipe to try. We create three layers: a buttery cookie base, a smooth strawberry mousse, and a bright strawberry topping.
The base gives us a gentle crunch, while the middle stays soft and creamy. The fruit layer adds a fresh finish and a beautiful color.
The best part is that we do not need an oven. We simply prepare each layer, chill the cake, and allow enough time for it to set. With a 9-inch springform pan, this recipe makes about 10 servings.

Ingredients We Need

For the cookie base:
- 1 1/2 cups (240 g) vanilla sandwich cookie crumbs
- 1/4 cup (59 g) unsalted butter, melted
For the mousse:
- 4 teaspoons unflavored gelatin powder
- 3 tablespoons cold water
- 3 cups (425 g) fresh strawberries, chopped
- 1 tablespoon fresh lemon juice
- 1 3/4 cups (420 ml) heavy cream
- 4 oz (113 g) mascarpone or cream cheese
- 1 cup (120 g) powdered sugar, sifted
- 1 tablespoon vanilla extract
- 1/2 teaspoon salt
For the topping:
- 1 1/2 cups (230 g) fresh strawberries, chopped
- 1/4 cup (50 g) granulated sugar
- 2 teaspoons unflavored gelatin powder
- 2 tablespoons cold water
For decoration, we can also prepare a little whipped cream and several fresh strawberry pieces.

Step 1: Build The Cookie Base

- We begin by lining the bottom of a 9-inch springform pan with baking paper. This helps us remove the finished cake more easily.
- Place 1 1/2 cups (240 g) cookie crumbs in a food processor. Process until the crumbs become very fine. Add 1/4 cup (59 g) melted butter and pulse until the crumbs look evenly moistened.
- Pour the mixture into the pan. Press it firmly across the bottom with the flat bottom of a glass or measuring cup. Make the layer even, especially around the edges. Place the pan in the freezer while we prepare the mousse.

Step 2: Prepare The Strawberry Puree

- Place 3 cups (425 g) chopped strawberries and 1 tablespoon lemon juice in a food processor. Blend until smooth. For a silkier texture, we can press the puree through a fine-mesh sieve to remove the seeds.
- Meanwhile, sprinkle 4 teaspoons gelatin over 3 tablespoons cold water. Let it stand for about 5 minutes so the powder can soften.
- Measure 1/4 cup of the strawberry puree and mix it with the softened gelatin. Heat it for about 1 minute in a microwave-safe bowl, then stir until the gelatin has dissolved. Mix this portion back into the remaining puree.

Step 3: Make The Creamy Mousse

- In a clean bowl, combine 1 3/4 cups (420 ml) heavy cream, 4 oz (113 g) mascarpone or cream cheese, 1 cup (120 g) sifted powdered sugar, 1 tablespoon vanilla extract, and 1/2 teaspoon salt.
- Beat at medium-low speed for about 5 minutes, stopping occasionally to scrape the sides. We want the mixture to become fluffy and hold soft peaks.
- Slowly add the strawberry puree. Use a silicone spatula to fold everything together from the bottom upward. We should fold gently until the color looks even and no white streaks remain.

Step 4: Chill The Mousse Layer

- Remove the cookie base from the freezer. Pour the strawberry mousse over it and spread the surface evenly with a spatula.
- Cover the pan and refrigerate for about 2 hours. The mousse should become firm enough to support the final fruit layer.

Step 5: Prepare The Strawberry Topping

- Sprinkle 2 teaspoons gelatin over 2 tablespoons cold water. Let it stand for about 5 minutes.
- Blend 1 1/2 cups (230 g) chopped strawberries with 1/4 cup (50 g) granulated sugar. Strain the puree if we want a smooth finish.
- Mix 1/4 cup of the puree with the softened gelatin. Heat for about 1 minute, then stir until completely dissolved. Combine it with the remaining puree and mix well.

Step 6: Finish And Chill

- Pour the strawberry topping gently over the chilled mousse. Slowly tilt the pan so the layer spreads evenly without disturbing the mousse underneath.
- Cover the cake and refrigerate for at least 6 hours. Chilling overnight gives us the best texture and makes slicing easier.

Step 7: Serve The Cake

- Before serving, carefully run a thin, lightly greased spatula around the inside edge of the pan. Release the springform ring and transfer the cake to a serving plate.
- We can decorate the top with small swirls of whipped cream and fresh strawberry pieces. For neat slices, use a clean sharp utensil and wipe it between cuts.
