Are we ready to make a smooth and comforting pumpkin soup together? This recipe turns simple vegetables into a rich bowl with a deep roasted flavor.
Instead of cooking everything directly in the saucepan, we first roast the pumpkin, carrots, and garlic. This extra step brings out their natural sweetness and gives the soup a fuller taste.
We then combine the roasted vegetables with onion and vegetable stock, blend everything until smooth, and finish with cream and cheddar. The entire process takes about 55 minutes and makes four servings.
Ingredients For Four Servings
Before we begin, we can measure everything so the cooking process moves smoothly.
- 2 to 2.5 pounds cooking pumpkin, peeled and cut into cubes
- 6 to 8 ounces carrots, about 2 medium carrots
- 2 tablespoons avocado oil or olive oil
- 4 to 6 large garlic cloves, unpeeled
- 1/2 Vidalia onion, finely diced
- 2 tablespoons unsalted butter
- 2 cups vegetable stock
- 1/2 cup heavy cream
- 4 ounces cheddar cheese, grated
- 1.5 teaspoons salt
- 1/2 teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon ground chili powder, adjusted to taste
Step 1: Prepare The Pumpkin
- We heat the oven to 425°F. We cut the pumpkin in half lengthwise, remove the seeds and inner strands, then peel it. We cut the flesh into roughly 1-inch cubes.
- We place 2 to 2.5 pounds of prepared pumpkin into a large bowl. Cutting the pieces to a similar size helps them roast evenly.
Step 2: Season The Vegetables
- We peel and chop two medium carrots, then add them to the pumpkin. We pour in 2 tablespoons of oil and add the salt, black pepper, onion powder, garlic powder, paprika, and chili powder.
- We toss everything well until the oil and seasoning coat the vegetables evenly.
Step 3: Roast For 30 Minutes
- We line a large baking tray with baking paper and spread the pumpkin and carrots across it in one layer. We place 4 to 6 unpeeled garlic cloves on the tray as well.
- We roast the vegetables at 425°F for about 30 minutes. Around 20 minutes, we can check them and turn a few pieces if needed. The pumpkin should be tender enough to pierce easily with a fork.
Step 4: Cook The Onion
- While the vegetables roast, we finely dice half a Vidalia onion and grate 4 ounces of cheddar cheese. We also measure 2 cups of vegetable stock and 1/2 cup of cream.
- When the vegetables are nearly ready, we melt 2 tablespoons of unsalted butter in a large saucepan over medium heat. We add the onion and cook for 5 to 7 minutes, stirring occasionally, until it becomes soft and lightly golden.
Step 5: Build The Soup
- We transfer the roasted pumpkin and carrots into the saucepan. We let the garlic cool briefly, remove its skin, and add the soft roasted cloves.
- Next, we pour in the 2 cups of vegetable stock. We stir well and bring the mixture to a gentle simmer. We cook it for about 5 minutes so the roasted flavors can blend with the stock.
Step 6: Blend Until Smooth
- We turn off the heat before blending. With an immersion blender, we carefully blend the mixture until it becomes smooth and creamy.
- If we use a countertop blender, we transfer the hot mixture in small batches and work carefully. If the soup seems too thick, we can add 2 to 4 tablespoons of extra stock at a time until the texture feels right.
Step 7: Add Cream And Cheese
- We return the blended soup to low heat and slowly pour in 1/2 cup of cream while stirring. Then we add the grated cheddar gradually.
- We continue stirring until the cheese melts completely and the soup becomes silky. We keep the heat gentle rather than allowing the soup to boil strongly.
Step 8: Taste And Serve
- We taste the soup before serving. If needed, we can add a little more salt, black pepper, paprika, or chili powder.
- We ladle the soup into four bowls while warm. Roasted pumpkin seeds, a small spoonful of cream, or extra grated cheddar can add color and texture.
Storage Tips
We can place leftovers in a sealed container and refrigerate them for 3 to 4 days. When reheating, we use low to medium-low heat and stir regularly. If the soup becomes thicker after chilling, we can add a little vegetable stock or water.
