Clay-oven cooking gives pomfret a lightly charred exterior and deep flavor while keeping the flesh tender.
A yogurt and spice marinade adds richness, while the fresh cabbage, carrot, mint, and lemon salad provides a crisp contrast.

Ingredients

For the Pomfret
- 2 whole pomfrets (300–500 grams each), cleaned and scaled
- 1 tablespoon lemon juice
- Salt, to taste
- 2 tablespoons butter or oil, for basting
For the Marinade
- ½ cup thick yogurt or hung curd
- 1 tablespoon ginger-garlic paste
- 1 teaspoon Kashmiri chili powder
- ½ teaspoon turmeric powder
- 1 teaspoon coriander powder
- ½ teaspoon ground cumin
- 1 teaspoon garam masala
- 1 tablespoon lemon juice
- 1 tablespoon oil
- Salt, to taste
For the Salad
- 2 cups shredded cabbage
- 1 carrot, julienned
- A handful of fresh mint leaves, chopped
- Juice of 1 lemon
- 1 tablespoon olive oil
- Salt and pepper, to taste

Instructions

1. Prepare the fish. Make shallow diagonal slits on both sides of each pomfret. Rub with lemon juice and salt, cover, and refrigerate for 15 minutes.
2. Make the marinade. Combine the yogurt, ginger-garlic paste, chili powder, turmeric, coriander, cumin, garam masala, lemon juice, oil, and salt. Mix until smooth.
3. Marinate the fish. Coat each pomfret thoroughly with the marinade, working it into the slits and cavity. Cover and refrigerate for 1–4 hours.
4. Prepare the salad. Combine the cabbage, carrot, and mint in a bowl. Whisk together the lemon juice, olive oil, salt, and pepper, then toss with the vegetables. Refrigerate until needed.
5. Heat the oven. Preheat a conventional oven to 200°C (400°F). For a clay oven or tandoor, follow the equipment's recommended preheating procedure.
6. Cook the fish. Place the pomfrets on skewers or a greased baking tray. Bake for approximately 20–25 minutes, depending on their size and thickness. Baste with butter or oil halfway through cooking.
7. Finish under the broiler. Broil for 2–3 minutes for a lightly charred surface, watching closely to prevent burning.
8. Check doneness. The thickest part of the fish should reach 145°F (63°C) on a food thermometer.
9. Rest and serve. Remove the fish from the oven and let it rest for 5 minutes. Serve immediately with the prepared salad.

- Keep the fish refrigerated throughout marination.
- Do not marinate for more than 24 hours, as the acidic ingredients can affect the texture.
- If the fish has excess surface moisture, pat it dry before applying the marinade.
- Add a small pinch of chaat masala to the salad for extra tanginess.
