A dessert that looks like a fresh lemon but turns into a light, creamy mousse when sliced makes an especially fun addition to a celebration table.
This lemon-shaped mousse combines white chocolate, cream and bright lemon flavor, with a small center of lemon curd hidden inside. The recipe uses silicone molds to create the distinctive shape, then finishes the chilled desserts with yellow coloring for a realistic appearance.

Ingredients

Yield: 6 lemon-shaped mousses
Preparation and chilling: About 12 hours or more, plus overnight freezing
For the mousse:
1 1/2 sheets gelatin
330 g double cream
75 g lemon juice
90 g white chocolate
6 teaspoons lemon curd
For the lemon curd:
4 egg yolks
2/3 cup caster sugar
60 g unsalted butter
2 teaspoons grated lemon zest
100 ml lemon juice
Yellow food coloring spray, for finishing

Instructions

1. Make the lemon curd by whisking the egg yolks and sugar together, then heating them gently with butter, lemon zest, and lemon juice until thickened. Cool and refrigerate until completely chilled.
2. Place small portions of lemon curd into small molds and freeze until firm. These will become the centers of the finished mousses.
3. Soften the gelatin in cold water. Meanwhile, chop the white chocolate and place it in a bowl.
4. Heat half of the cream until boiling, then pour it over the white chocolate and softened gelatin. Stir until the chocolate has melted smoothly.
5. Add the remaining cream and lemon juice. Cover and refrigerate the mixture for at least 12 hours so it becomes thick enough to whip.
6. Whip the chilled mousse until light and airy. Pipe it into lemon-shaped silicone molds, leaving enough space for the frozen lemon curd centers.
7. Place a frozen portion of lemon curd into each mold, cover completely with more mousse, and freeze overnight.
8. Carefully remove the frozen mousses from the molds, coat them with yellow food coloring spray, and allow them to soften before serving. Add a small decorative leaf if desired.

Helpful Tips

The silicone mold is essential for creating the recognizable lemon shape, so choose a flexible mold with individual cavities approximately the size of an average lemon. The original recipe specifically relies on silicone molds to achieve its presentation.
Do not worry if the mousse mixture is not completely firm after its long refrigerator rest. It is intended to have a thick, creamy consistency that can be whipped before being piped into the molds. The final freezing stage is what makes the shaped desserts firm enough to unmold.
Store-bought lemon curd can also simplify the preparation if making the curd from scratch is inconvenient. This is particularly useful when preparing several portions for a party or special gathering.
