Creamy Coconut Ice Cream

Coconut ice cream is a refreshing frozen dessert built around the rich flavor of coconut milk.
This simple recipe uses a lightly thickened coconut base and a manual freezing method, making it possible to prepare without an ice cream machine.
Ingredients
- 400 ml full-fat coconut milk
- 100 ml water
- 80 g granulated sugar
- 1 tablespoon cornstarch
- ¼ teaspoon salt
- 2 tablespoons toasted coconut, optional
- 2 tablespoons chopped peanuts, optional
Prepare the Coconut Base
Pour the coconut milk and water into a saucepan. Add the sugar, cornstarch, and salt while the mixture is still cool.
Whisk until the cornstarch dissolves completely. Place the saucepan over low to medium heat and stir continuously until the mixture becomes smooth and lightly thickened. Do not bring it to a vigorous boil.
Remove from the heat and let the mixture cool completely.
Freeze the Ice Cream
Transfer the cooled mixture to a shallow, freezer-safe container and cover.
Freeze for about 1 hour, then stir thoroughly to break up ice crystals. Return the container to the freezer and repeat every 30–60 minutes for several rounds.
Continue freezing until the ice cream reaches a firm, scoopable consistency. If it becomes too hard, leave it at room temperature for a few minutes before serving.
